Chicken Salad Sandwich


The good thing about chicken that if prepared correctly can make for a filling meal

INGREDIENTS

1 Chicken Breast
1 Teaspoon of Black Pepper
1 Teaspoon of Salt
1 Teaspoon of Hot Sauce
1/2 Small Red Onion
1 Tablespoon of Mayo

COOKING

1 Chicken breast will yield enough for two chicken salad sandwiches
and two chicken mozzarella sandwiches
Place you hand over the breast and lice horizontally about a 1/4 in even smaller if could be
Salt and Pepper the top of the chicken
Take medium pan coat the bottom with olive oil
Place your chicken season side down on high heat
Salt and Pepper the other side now
Once side start to turn white
Reduce heat to medium
and turn the chicken over
keep on heat for about 10 to 12 minutes
The easiest way to know if you chicken is done take your
thickest piece and slice at the thickest part
This needs to be WHITE and then the chicken is done
From here you can make either or both today we will make both

Using you sharpest knife cut half of the chicken into small cubes
Dice the red onion very small and place in bowl
Place chicken and as much or as little hot sauce as
you may like I put 6 squirts per half breast
SPICY but mellow
One tablespoon of Mayonnaise
MIX

On a Small sauce pot on low heat melt the mozzarella
Fresh Mozzarella balls will work better than the mozzarella block
because you need that liquid to help it no stick to the bottom of the pot

Add a teaspoon of Milk
(it will help for the cheese not to stick or burn)
and a Teaspoon of Black Pepper

Using a Spoon Kneed the cheese into a ball

Slice your bread  and place on the pan
on High heat

Until the bread toast




Use the toasted bread with the melted mozzarella (L) or with the salad(R)
