Apple and Bacon stuffed Pork Loin



INGREDIENTS
1 LB Pork Loin
4 Apples
10 Strips of Bacon
1/2 Teaspoon of Paprika
1 Tablespoon of Lemon Juice
1 Medium Red Onion
1 Tablespoons of Vegetable Shortening
1 Cup of Oil
PREPPING
Take the 4 Apples and cube them up into small pieces
Place in bowl
Slice the Pork Loin and Slice into 1 inch thick pieces(L)
Place flat on cutting board(M)
using your sharpest knife cut a "pocket" into the loin(R)
WATCH VIDEO
Put aside 
Cube up the Bacon into 1/4 inch slices
Place in bowl
In a bowl mix Lemon Juice
Garlic
Paprika
mix and put aside
Slice up your Red Onion into small pieces
Place in bowl

COOKING
325 Degrees
20 Minutes

Pre Heat oven to 325
Place cooking sheet in oven linen in aluminum foil
and a cup of oil
In a medium pan at medium heat
drop two tablespoons of Vegetable shortening
Once the shortening has liquefied
Drop in the Red Onion
Once the Onions start to caramelize
Drop in the Apples and mix
then drop in the Bacon and mix
Cook until the Onions have become translucent
and the Bacon is starting to crisp
5 to 7 minutes
Drop in the the Garlic mixture and mix let cook for another 2 minutes
Take off the heat and let it for 5 minutes
Once the mixture is able to be handled using the back of a
wooden spoon place filling into the pocket of the Loin
Once the Loin pockets are full use a skewer to close up the openings
Preheat the medium pan and sear both sides about 3 minutes each side
Making sure not to burn each side once they are seared

Place in cooking sheet
Once the last one is put in
set timer for 10 minutes 
Flip over
Place in over for the final 10 minutes

Once the cooking is done
Take cooking sheet out of oven and let rest for 5 to 10 minutes
Once it is done use the remaining filling as a topping or enjoy as is

Steak and Steak Fries


INGREDIENTS 

STEAK FRIES
3 Medium Potatoes
3 Small Potatoes
1 Tablespoon of Olive Oil
1 Teaspoon of Garlic Powder
1 Teaspoon of Black Pepper
1 Teaspoon of Salt

STEAK
2 Tablespoons of Butter
8oz Steak
Salt and Pepper to taste


COOKING

Pre Heat your oven to 450 Degrees
Line your cooking sheet with aluminum and place in oven as it pre heats
Peel all your potatoes
I like to mix medium and small potatoes as the small ones will become crunchier
Take Potato (L)
Slice in half long ways (M)
Slice in four this will give you thick uniform slices(R)
Repeat with the small but you can slice long or wide(L)
Same as the medium slice in four for uniform slices(R)
Place all the potatoes in a bowl
Add 2 Tablespoons of OLIVE OIL
Add one teaspoon of Garlic Powder, Salt and Black Pepper
Mix
USING OVEN MITTS
take cooking sheet out and place on a wooden butcher
block or something that will not melt
Drop all the contents of the bowl in the sheet
Spread them out to make sure they are all touching the cooking surface
This will help them crisp up
Place in oven and place timer on 20 minutes
On high heat melt the Butter
Salt and Pepper the piece of steak and place it condiment side down
Salt and Pepper the other side now
After two to three minutes (when the bottom side is seared)
Turn over


When you start to see the Juice come to the top in about 4 minutes
like above on the bone(R) and the meat(L)

Take steak and put on the oven you are making your steak fries
Depending on the thickness of the steak will determine when it is done
I like my steak from medium Rare to Medium Well
so for this Chuck Steak it took about 5 minutes in the oven
Take steak out and let stand for a couple of minutes so the juices return to the meat
After 20 minutes in the oven the fries will be done
Having the aluminum helps to take the fries off that have roasted against it
Place over the steak

You can have them together or by themselves either way they are a real quick tasting meal

Spaghetti Alla Carbonara




INGREDIENTS

1 Lb of Spaghetti (Fresh optional)
1 1/2 Lbs of Sweet Italian Sausage
2 Cups of Frozen Peas
1/4 Lbs of Prosciutto
1 Medium Onion
1 Tablespoon of Minced Garlic
5 Eggs
2 Cups Grated Cheese
1 teaspoon of Black Pepper

PREPPING
The trick to this dish is to have all the prepwork done so the cooking will go smooth as all can be

In a Small bowl take your 5 Eggs and scramble them with Pepper only 

Take the casing off your Italian sausages and place "meat"


Take your prosciuto slices and sliced them in half


Cube up a medium onion
SEE VIDEO
Place in bowl with Minced Garlic

Have everything at arms reach as now you are ready to cook.
 COOKING

Get your water and salt to boil in a Large pot
Drop in the Pasta
In a deep stainless steel deep frying pan on med/high heat heat up the olive oil

Once the Oil looks wavy in the pan (hot) drop in the Sausage

Using your spoong break up the sausage into smaller pieces
Do not worry if yhe sausage is sticking to the bottom when you all the pasta this will
 lift all that charbroiled flavor right into your dish

When the sausage starts to take color drop in the Onions and Garlic

Mix all until the onions like always start to become translucent
Drop in straight from the freezer your 2 cups of peas
(you want the consistency of the peas that is why you don't want them
thawed of from a can)


Mix peas in

After the peas start to loose the white (Frozen) color drop in your
Prosciutto and fold them into your mixture

By this time your pasta should be done to your consistency

Being VERY CAREFUL transfer the cooked pasta from the boiling water into the pan
(do not strain the pasta as you want some of the liquid to lift the charcoal flavor)

Add the mixture of Eggs and Black Pepper
Mix in the heat for 1 minute
(this will help the Eggs not be as runny)

Take off the heat add the Grated Cheese and mix
You may serve family style


Or by dish
